Sheet Pan Pancakes, Large Family Style

Strawberry, Banana, Chocolate Chip Sheet Pan Pancakes

2 cups pancake mix (such as Bisquick)
1 cup milk
2 eggs
1 teaspoon vanilla extract
1 banana, sliced thin
1/4 cup mini semi sweet chocolate chips
4-5 strawberries, sliced thin
1/4 cup blueberries
powdered sugar (for dusting)
pancake syrup (as desired)

Preheat oven to 425 degrees. Prep a 12x16 inch rimmed sheet pan with a sheet of parchment paper, and spray with non-stick oil.

To a mixing bowl, add pancake mix, milk, eggs, and vanilla extract. Whisk ingredients together until batter is smooth.

Pour batter onto sheet pan and smooth out evenly until it covers entire pan.

Top sheet pan with sliced banana and chocolate chips on one side, and berries on the other side. Bake for about 5-15 minutes or until cooked and slightly browned (cooking times will vary). Serve by cutting into squares.

Large Family Sheet Pan Pancakes
12 cups flour (4 pounds+)
1/2 cup baking powder
2 1/2 Tbsp salt
1 cup sugar
12 eggs
12 cups milk
2 Tab. cinnamon (optional)
2 Tab vanilla extract (optional)
3-4 cups mashed bananas, applesauce, pumpkin puree or the like
plus additional add-ins for topping such as chocolate chips, blueberries, sliced bananas, sliced strawberries and the like
parchment paper or cooking spray

Preheat oven to 425
Measure flour, baking powder and salt into large mixing bowl. Mix to blend.
Crack in eggs.
Add milk.
Use your hand mixer to blend thoroughly.
Addd your fruit puree to the batter now, if desired . If not adding in items then add 2 more cups of flour and remix with hand mixer.
Cut parchment paper to fit your pans or spray them with cooking oil so they don’t stick.
Separate batter between 6 regular size sheet pans. Top with toppings, if desired.
Cook in oven for 20 minutes.
Either rotate bottom pan to top after 10 minutes or take top sheet pan out and move to bottom one up a rack.  Then cook for additional 10 mins.
