2 Tab oil
1 1/2 cups chopped onion
1 1/2 cups chopped onion
1 green pepper, chopped
2 medium cloves garlic, minced
2 cups of any combination of ham, chicken, shrimp or sausage
1 cup white or brown rice (not instant)
1/2 tea. thyme
2 bay leaves

3-4 drops of Tabasco sauce
1-16 oz. can diced tomatoes

1 Tbsp tomato paste
3 cups broth or water
Heat oil in a large pot. Add chopped onion, green pepper, garlic. Cook until lightly browned, stirring occasionally. Add ham, chicken, shrimp or sausage and white rice. Cook and stir until rice is well coated with oil. Transfer to crockpot. Add thyme, bay leaves, salt, Tabasco sauce, chopped tomatoes, tomato paste and broth or water and let cook on low all day. The smell of it cooking with drive your family crazy. (Or, if you are in a hurry, you can do it all the the pot. Just cover and simmer until rice is tender and liquid absorbed, about 20-25 minutes).
