Taco casserole

1 pack of tortillas, flour or corn
3/4 cup of sour cream or gfcf plain yogurt
2 1/2 cups of taco chicken, precooked 
1/2 cup of refried beans
1 can of corn, drained 
1 can of black beans, drained and washed 
3 cups of mixed cheese
1 1/2 cups fresh salsa

Layer the casserole like this, tortillas on the bottom, smear on sour cream, spread the refried beans, sprinkle on a layer of black beans and corn. Dot the corn and bean layer with salsa. Add on a layer of chicken and top with a layer of cheese. Rinse and repeat for 2 or 3 more layers. The top layer is just tortillas cheese and dollops of salsa. Bake at 400° for 20-30 minutes. For gfcf version use corn tortillas in the place of flour and yogart in replacement of sour cream. For the vegetarian version omit the chicken. Enjoy!
