Honey Lime Chicken

6 lb  Chicken thighs and/or breasts, raw, boneless, skinless
14 oz (1¹⁄3 cups) Honey
¹⁄2 cup Lime juice, fresh 
2 tsp Salt
1 tsp Pepper, black or white, ground
¹⁄4 cup Lime zest

Combine chicken thighs, honey, lime juice, salt, pepper, and lime zest in a large bowl. Stir well. Set aside. Allow flavors to blend for 15–20 minutes.       
Place seasoned chicken thighs/breasts on a sheet pan (18″ x 26″ x 1″) lightly coated with pan release spray and lined with parchment paper. Bake: 400 °F for 30–35 minutes. Once chicken thighs/breasts are removed from oven, cut into ¼″ cubes. 

Makes 25 (¹⁄4 cup) servings.
