Makes 50 dozen (600) cookies
Dough can be frozen.
10 lbs. All Purpose Flour
1/4 cup Baking Powder
4 Tab. + 2 tea. Baking Soda
4 lbs. 12 oz. Butter, softened
5 lbs Peanut Butter
5 lbs Sugar
8 cups Brown Sugar
28 eggs
14 tea. Vanilla (optional) or water, as needed
Mix together dry ingredients in one bowl. Cream together butters and sugars. Add eggs and vanilla, if using. Add dry ingredients to wet. If not using vanilla, add water, a little at a time, as needed.
Package dough to freeze now, if you wish, in smaller batches. Meanwhile, chill dough you are going to use today for about 15-20 minutes.
Bake 350F oven, 8-12 minutes.
Half Batch (25 dozen or 300 cookies)
5lbs Flour

2 lbs 6 oz. Butter
3 1/2 lbs. Peanut Butter
3 1/2 lbs. Sugar
4 cups Brown Sugar
14 eggs
1 Tab. + 2 tea. Vanilla (optional) or water, as needed
