BBQ Chicken, Large Family Recipe (60 servings)



30 pounds chicken pieces, roasted, one breast  OR one thigh with back OR one wing and one drumstick for each serving
2 tablespoons salt
1 tablespoon paprika
1 ½ teaspoons onion powder
1 ½ teaspoons dried thyme
1 ½ teaspoons black pepper
1 ½ teaspoons garlic powder
1 gallon BBQ sauce

Preheat oven to 350°F for convection or 375°F conventional oven.
Place chicken on six–12 inch by 20 inch by 2½ inch sheet pans lined with parchment paper
Add chicken, one tray at a time, to a large bowl and add seasoning and toss until chicken is well coated. Put back on tray.
Pour BBQ sauce over chicken, one tray at a time, in a large bowl and toss until well coated. Put back on tray.
Cook chicken in preheated oven for 30 minutes or until internal temperature reaches 165°F. Note: BBQ sauce contains sugars that brown quickly. Monitor chicken to ensure sauce has not burned.
Cover and hold the chicken in warm oven to serve.
Makes 60 servings, one breast OR one thigh with back OR one wing and one drumstick for each serving.
