Primavera Pasta Parmesan, Large Family Recipe (14 servings)


1 pound rotini pasta
Pan release spray
1/2 cup red bell peppers
1/2 pounds zucchini squash
1 cup whole broccoli
fresh
3 1/2 tea. garlic
ready to use, minced
1.4 cup butter
1 1/2 cups parmesan cheese, shredded

Step 1 Bring water to full boil in large pot. Add rotini and cook 10 to 12 minutes, stirring occasionally. Test at 10 minutes; continue to cook if needed until al dente. Do not overcook pasta. Drain well. 

Step 2 Spray one–12 inch by 20 inch by 4 inch pan with pan release spray. Pour pasta evenly into pan. 

Step 3 Rinse peppers, squash, and broccoli under cool running water. 

Step 4 Trim and chop peppers into 1 inch pieces. 

Step 5 Chop squash into 1 inch cubes. 

Step 6 Chop broccoli into 1 inch stem and floret pieces to measure 1 quart and 1 cup. 

Step 7 Place garlic and butter in saucepan, melt butter. Set aside for assembly. 

Step 8 Measure 5½ cups parmesan cheese. Set aside for assembly. 

Step 9 Bring water to full boil. Add peppers, squash, and broccoli. Cook for 3 to 5 minutes; drain. 

Step 10 Stir melted butter and garlic mixture into the pasta. 

Step 11 Add peppers, squash, and broccoli to rotini. Toss to combine. 

Step 12 Add parmesan cheese into pan and toss to combine. 

Step 13 Serve immediately. Each serving is approximately ¾ cup. 

Recipe Note: Hold no more than 2 hours before serving. Do not make too far in advance or it will be dry and visually unappealing.
