Squash Casserole -Large Family Recipe (25 servings)


3 cups onions, chopped
2 tablespoon olive oil
1 lb Zucchini, grated
1 lb Yellow squash, grated
2 tsp parsley
2 tsp oregano
½ tsp salt
½ tsp black pepper
4 eggs
½ cup milk
5 oz Shredded cheddar

Preheat oven 400F
Spray 1/2 steam table pan with spray.
Sauté onions with oil 5 minutes, stirring frequently.
Add squashes and cook 10 more minutes.
Add parsley, oregano, salt and pepper and continue to cook squash 7-10 minutes until browning.
Beat milk and egg together in a bowl. Add vegetables to pan. Top with egg mixture, keeping vegetables evenly distributed. Top with cheese. Bake 25 minutes.
