Vegetarian Chili - Large Family Recipe (25 servings)



3 Tab canola oil
2 ⅓ cups onions, diced
1 ½ cups green peppers, diced
1 ½ cups pinto beans
1 ½ cups kidney beans
1 ½ cups black beans
¼ cup chili powder
2 ½ cups diced tomatoes
4 cups vegetable stock
1 tea Hot sauce
9 oz Tomato paste
1 cup cheddar cheese, shredded and 1 cup mozzarella cheese, shredded OR 2 cups Mexican Blend
9 oz Tortilla chips

Heat oil in large pot. Add onions and peppers and saute a few minutes. Add beans and chili powder.
Add stock, tomatoes and hot sauce. Simmer 20 minutes.
Add tomato paste. Cook for an additional 10 minutes.
Combine cheeses.
Makes 25 servings (One serving equals 3/4 cup chili, a few chips and 2 Tab. Cheese.)
