12 cups all-purpose flour
1 cup sugar
1/2 cup baking powder
2 TBSP baking soda
2 1/2 TBSP salt
2 TBSP cinnamon
To Make Pancake Mix: Mix flour, sugar, baking powder, salt and cinnamon.
Store tightly sealed in a cool dry place.
How to Use:
Determine how many pancakes you want. Each 1 cup of dry pancake mix will make approximately 5 pancakes.
For each cup of pancake mix you use, you will add:
1 egg
1 cup milk
1 Tablespoon melted butter or oil
Optional: 1/3 cup chocolate chips or blueberries
To Make the Entire Batch at Once, You Will Need:
12 eggs
12 cups milk
3/4 cup melted butter or oil
Optional: 4 cups chocolate chips or blueberries
To Make Pancakes:
Preheat and spray Pam to lightly grease a griddle or pan and heat to medium high heat.
Combine pancake mix with egg, milk and butter or oil. Stir all together until everything is wet but not over-mixed.
Gently stir in chocolate chips or blueberries, if desired.
Pour 1/3 cup batter on griddle and cook until bubbles on the surface of the pancakes have popped (about 3-4 minutes). Flip and cook until the underside is light golden (another 1 – 2 minutes).
FREEZE
To make pancakes for the freezer, let cool and then either slip a piece of parchment paper between each pancake and then put in freezer bags so that people can grab individual pancakes. Or you can put a family meals' worth in a bag together, which is about 10-15 pancakes for our family of five.
TO SERVE
To eat pancakes, set bag in the refrigerator the night before and heat pancakes in the microwave.
