3/4 cup Margarine
1/3 cup Frozen whole eggs, thawed OR 2 Eggs
3 Tbsp Milk
3 1/4 cups All purpose OR 1 3/4 cups Whole-wheat flour AND 1 1/2 cup all purpose flour
1 1/2 tsp Baking powder
3/4 tsp Salt
3/4 tsp Baking soda
1/2 tsp Ground nutmeg
1 1/2 tsp Ground cinnamon
1 1/2 tsp Vanilla extract
Mix sugar and margarine into a commercial mixer on
medium speed or 3–4 minutes, until light and fluffy. DO NOT OVERMIX. Slowly add eggs and milk. Mix on medium–low speed for 1 minute.
Slowly add flour, baking powder, salt, baking soda,
nutmeg, and cinnamon. Mix on medium–low speed for 3 minutes. DO NOT OVERMIX. Add vanilla extract. Mix on
medium speed for 30 seconds. DO NOT OVERMIX. Using a No. 30 scoop, portion 2 Tbsp drop cookies on a sheet pan (18″ x 26″ x 1″).
Place 25 cookies on each pan. Bake:: 350 °F for 10–15 minutes. Makes 25 cookies.
