Yellow Cake

¾ cup Frozen whole eggs, thawed OR 3 large eggs
1 ½ tsp Vanilla extract 
1 ½ cups Water 
1 cup Shortening
2 cups All purpose or Whole-wheat flour
1¾ cups Sugar
2 Tbsp Instant nonfat dry milk 
1/8 cup Baking powder 
 ¾ tsp Salt

Mix together eggs, vanilla, water, and shortening on low speed for 1 minute. DO NOT OVERMIX.  9 oz  1 lb 2 oz 1 qt 2 Add flour, sugar, dry milk, baking powder, and salt. Using a paddle attachment, mix on low speed. DO NOT OVERMIX.
 
Mix on medium speed for 3 minutes. DO NOT OVERMIX. Pour cake batter into a half sheet pan (18″ x 13″ x 1″) lightly coated with pan release spray. Bake: 350 °F for 35 to 45 minutes.
Allow cake to cool. If desired, frost/drizzle with icing.   Cut each pan 5 x 5 Makes 25 servings (about 2 ½″ x 2 ½″ square).
