Pork Afritada, Large Family Recipe (22 servings)


5 lbs Pork
1/3 cup soy sauce, low-sodium
2 Tablespoons lemon juice
1 1/2 cloves fresh garlic
1/2 pound onions
1 cup chicken broth, low-sodium
18 oz. fresh carrots, whole
18 oz. red potatoes, whole, with skin on
16 oz. diced tomatoes, canned
3/4 teaspoon table salt
3/4 teaspoon ground black pepper
Cube pork into 1 inch by 1 inch by 1 inch cubes.
Mix soy sauce and lemon juice in mixing bowl.
Combine marinade and pork cubes in large food container. Let stand in the refrigerator for at least 1 hour.
Wash carrots, potatoes, onions, and garlic in cool running water.
Peel and slice carrots.
Dice potatoes with skin on.
Peel and trim garlic and onions. Mince garlic. Chop onions.
Add garlic and onions to marinated pork, mix well.
Preheat oven to 350°F for conventional oven or 325°F convection oven.
Transfer pork onto a pan. Cover the pan tightly.
Roast in 350°F conventional oven for 30 minutes or 325°F convection oven for 25 minutes.
Remove pan cover. Add chicken stock, carrots, potatoes, tomatoes with juice, salt, and pepper to pork mixture. Cover pan, return to oven.
Continue cooking for approximately 30 minutes or until internal temperature reads 165°F and liquid is reduced.
Makes 22 ⅔ cup of pork afritada serving.
