4-Ingrediebt Tilapia

Makes 4 servings

1 tablespoon extra-virgin olive oil
1 can Rotel diced tomatoes, with liquid
4 fresh tilapia filets
Salt and ground black pepper, to taste
Optional garnishes: green olives and fresh parsley

Add olive oil to a large skillet, then heat to medium-high heat. Add tilapia and season with the salt and pepper. Add the tomatoes and liquid.
Cover the skillet and allow the fish to cook for 7 to 10 minutes.
Top with the optional garnishes if you desire.
