Frito Pie

To make one small vegetarian, one small gluten and dairy free and one large regular pan of Frito Pies:

2-3 large bags Frito chips*
3 cans of Chili, 1 Vegetarian**
3+ cups shredded cheese, including 1/2-1 cup Dairy Free cheese
optional: sour cream for topping

Pour Fritos to cover the bottom of two 9 inch square pans and one 9×13.
Pour chili over Fritos, making sure to put the vegetarian chili in one of the small pans.
Sprinkle shredded cheese on top, making sure you put the Dairy Free cheese in the small pan you didn't put the vegetarian chili in 
Bake at 350 for 10-15 minutes until cheese is melted and Chili is heated all the way through.

*You cannot use Chili or JalapeƱo spiced Fritos in the Gluten and Dairy Free pan, although you can use them in the other two.
**You can use Chili Beans instead if Chili.

Teriyaki Mushrooms



2 pounds baby bella mushrooms (or any type of mushroom )
1 bottle Teriyaki Sauce (your choice)
4 tablespoons unsalted butter (or gfcf margarine, if you want them gfcf)

Place all ingredients in the slow-cooker.
Cook for 4-6 hours in your slow-cooker, (or you can cook them 1 hour on the stovetop.)

Serving Suggestions:
  • As an appetizer, serve on crackers or flatbread, with or without cheese slices (as in picture.)
  • Serve over rice, noodles or baked potatoes
  • Make a gravy. When the mushrooms are done, remove them, turn the heat as high as it will go, add about 1/2 – 1 cup water mixed with 3 tablespoons flour (I wish I could be super exact on this but it really is a guessing kind of thing. You’ll get it!), and stir it in. Be sure to stir often while that bubbles up nicely. Put the mushrooms back in and you have a yummy mushroom gravy!

Baked Spaghetti, Large Family Freezer Meals

Shopping List
4 lbs cooked spaghetti noodles
Big batch spaghetti sauce* (or 4 cans of sauce)
12 cups ricotta cheese, cottage cheese or sour cream1
18-24 cups mozzarella or mixed cheese

Directions to make 6 pans.
Cook noodles and then stir cooked noodles into sauce*. Put half the spaghetti into 13 x 9 pans.
Spoon ricotta cheese over top of spaghetti.
Put the rest of the spaghetti on top.
Finish up with shredded cheese (3-4 cups per pan).
If you want to serve one for dinner tonight, preheat your oven to 375F.
Wrap one pan in foil.
Place it in preheated oven for 1 hour or until heated through.
Freeze the rest according to the directions below.

*Note: If you make the sauce first, cook it in a BIG pot and then there will be room to just to dump the cooked spaghetti in, without dirtying another pan.

FREEZER MEAL STORAGE DIRECTIONS
Allow your meals to cool completely before placing in the freezer.
Wrap each 9×13 pan with a layer of foil.
Label the top of each 2-2 1/2 gallon freezer bag with recipe name and date.
Slide each 9×13 pan in the freezer bag.
Set each pan to freeze in the freezer. Do not stack the pans on top of one another until each pan is individually frozen.


FREEZER COOKING DIRECTIONS
Set the desired pans of Easy Baked Spaghetti out in the refrigerator the evening before you’d like to serve them.
Preheat your oven to 375F.
Remove pan from the plastic bag.
Place in preheated oven for 1 hour or until heated through.

Easy Overnight Slow Cooker Oatmeal

6 cups  old fashioned oatmeal
12 cups liquid (water, milk, almond milk – your choice)
vanilla
cinnamon
butter
Instructions

Spray slow cooker with cooking spray.
Set heat on low.
Add  old-fashioned oatmeal.
Add liquid of choice, such as milk or  almond milk.
Add vanilla, cinnamon to taste.
Add a few pats of butter or margarine.
Keep it on low for about 7 hrs.
Sweeten as desired.
Serve with fruit, greek yogurt, or other favorite sides.

Grandma Carol's Vegetable Hamburger Soup for the Freezer

1 lb. hamburger
1 large bottle/can tomato juice or V-8 juice
1 large bag frozen mixed vegetables

Brown the hamburger. Add the rest of the ingredients and simmer for an hour.
Serve with bread or rolls.

Note: Can easily make Vegetable Lentil Soup at the same time.

To freeze, put in 16 Ounce restaurant take out/ freezer deli food storage containers with lids, which you can find the n Amazon.  They will keep food in the freezer for months without freezer burn or excessive ice crystals. The lids provide a super tight, leak-proof seal too.

Easy Vegetable Lentil Soup for the Freezer

3/4 -1 cup lentils
1 Tab. Olive oil
1 large bottle/can tomato juice or V-8 juice
1 large bag frozen mixed vegetables

Add all of the ingredients and simmer for an hour.
Serve with bread or rolls

Note: Can easily make the same time as Vegetable Hamburger Soup.
